Installation conformity of gas appliances in commercial kitchens

Key points in the installation conformity inspection of restaurant, hotel and institutional kitchens.

Subject of the inspection

The installation conformity inspection assesses not the appliance itself but the premises in which it is installed: whether the premises meet the installation requirements of the relevant legislation, standards and gas distribution company specifications.

Common topics

The premises characteristics, combustion air, ventilation, gas installation, safety devices (gas detector, automatic shut-off valve), chimney and exhaust, fire safety, electrical installation, appliance layout and documentation are examined.

Topics specific to commercial kitchens

  • Hood capacity, its position over the appliance and the hood–appliance interlock
  • Exhaust duct route, grease collection and access for cleaning
  • Balancing of fresh air supply with the exhaust flow rate
  • Adequacy of ventilation in relation to the total heat output of appliances operating simultaneously
  • Fire suppression system inside the hood and its interlock with the gas shut-off

Types of outcome

The inspection result is reported as conforming, conditionally conforming (conforming once the deficiencies have been rectified) or non-conforming. İNTEGRA96 does not propose design solutions for rectifying deficiencies, as this would constitute consultancy. The report states which requirement has not been met and its basis.
